Delicious and hearty soup that will warm you up over the cold winter months. The pulses in the soup add to the protein value and provide lots of other essential vitamins and minerals.

Ingredients:

1 ½ cups pasta (tubetti)

2 tbsp olive oil

8 cups broth

6 chopped garlic

1 chopped large onion

3 chopped celery

2 chopped carrots

1 tbsp chopped thyme

1 can diced tomatoes

1 can chickpeas (rinsed/drained)

1 can white kidney beans (rinsed/drained)

1 can red kidney beans (rinsed/drained)

2 chopped zucchinis

2 tsp pepper

1tsp salt

 

Directions:

• Cook pasta to al dente. Drain and toss in olive oil.

• In a large saucepan heat oil and add garlic to sauté.

• Place heat on MED add carrots, celery, onions until soft. Stir regularly.

• About 10mins add herbs and raise heat. Add beans, tomatoes, zucchini.

• Add chicken stock and bring to boil.

• Lower heat and simmer 15-20min

• Season adding salt and pepper.

• Add cooked pasta and ENJOY!
