The owner of Wonder Sushi, a popular west London restaurant shut down by the Middlesex-London Health Unit, is speaking out and apologizing.

The restaurant was closed following an inspection last Wednesday, and Leon Fu says he and his staff have been working around the clock to make changes.

"I am very sorry that this happened...[We are] making sure everything is under the right temperature, and we are re-organizing all the space, and we are cleaning the ceiling, the floor, everything - top to bottom.

Wonder Sushi was given a conditional pass by health inspectors on Tuesday, but inspectors decided to return the next day.

The health unit's Wally Adams says, "I don't have all the details but apparently the conditions were sufficiently worse that the inspector made the decision to close the restaurant to get closer to compliance and reduce the risk to customers."

In total, five critical and 11 non-critical infractions were found by health inspectors.

Wonder Sushi is one of just eight restaurants that have been closed by the health unit in the past two years, however a large number of restaurants have recieved yellow conditional passes.

"[Yellow] is still you want to use the term safe, it's still relatively safe, but needs to be safer," Adams says.

As for the infractions that led to the closure at Wonder Sushi, Fu believes he and his staff staff, including professional contracted workers, have remedied the situation.

Another inspection is expected later Monday, and Fu is assuring customers this will never happen again, saying this was hard, but necessary lesson.

"This is very good for all of us, for me myself the owner and for all the employees. They learned and they say, 'Ok, this is the right way, this is what we need to do now every night.'"
