London’s latest Sunripe location has opened three weeks ahead of schedule.

The fresh produce and prepared food store was expecting to be open for business by Easter. Instead, the store 1175 Fanshawe Park Rd. W. in Hyde Park opened earlier this week.

Owner Ingrid Willemsen said the mild winter helped construction workers complete the work quicker.

“We don’t have all of our equipment yet but we decided to get going,” Willemsen said.

She also said the 70 full-time staff and the part-time workers that have been employed also learned the necessary skills in a short time.

There were more than 1,000 people who applied for those jobs.

While the store has more added features such as a sushi bar and a juice bar, it is also energy efficient.

The building is designed to be equipped with a natural gas generator that can take the store off the grid during peak times.

Sunripe also has locations on Adelaide Street and in Sarnia.
